Die H-Qualität von Zimt hat 5 Arten von Unterqualitäten, die in H1, H2 Super, H2 Normal, H2 FAQ und H3 kategorisiert wurden. Im Gegensatz zu anderen Zimtsorten, bei denen die beste Qualität durch die größte Zahl gekennzeichnet ist, gilt H1 hier als die feinste und vor allem teuerste Sorte. Darüber hinaus ist H1 bei den Südamerikanern sehr gefragt. H2 Super ist dicker als H1 und enthält goldgelbe Zimtstangen von hoher Qualität. Bis zu 90 % von H2 Normal bestehen größtenteils aus goldgelben Zimtfedern und es ist dicker als H2 Super. Ebenso besteht H2 FAQ aus spröden Federn der Güteklasse H2 und ist dicker als alle oben genannten. H3 gilt als der dickste aller Hamburger Zimtsorten und besteht aus rauer Zimtrinde aus spröden Stacheln.
